Courgette and Feta Fritters

Ingredients:

250g courgettes, finely grated
2 spring onions, finely chopped
A handful of finely chopped parsley leaves
A small handful of finely chopped dill
½ teaspoon dried mint
70g plain flour
1 egg, yolk and white separated
60g feta cheese
2 tablespoons olive oil
Lime wedges, to serve
Sea salt and freshly ground black pepper

Method:


1. Grate the courgettes and put them in a sieve. Squeeze them to remove the moisture.


2. Put the courgettes into a mixing bowl, along with the spring onions, parsley, dill, dried mint and a generous pinch of salt and pepper. Using a sieve, sift over the flour then add the egg yolks and mix well.


3. In  a separate bowl whisk the egg whites into soft peaks then fold them into the courgette mixture so that everything is mixed together.


4. Heat half the oil in a non-stick frying pan over a medium heat. Spoon in half the mixture and fry gently for 2-2 ½ minutes on each side or until golden and cooked through. Repeat process. 


5. Serve immediately with a wedge of lime and some left over herbs and feta to garnish.

 

TOP TIP: Add a poached egg and serve for breakfast!
