Blending is done to improve your wine. At Byington, we have taken 4 different wines, all from our Tin Cross Vineyard located in the Alexander Valley region of Sonoma County, blended them together to make what we think of as an excellent Bordeaux-style wine… we call it Blend 122. Bordeaux-style wines are best known as medium to full-bodied wines that when tasted burst with mineral and fruit notes.
Our Blend 122 is a blend of Cabernet Sauvignon, Merlot, Cabernet Franc, and Petit Verdot, which when blended has flavors of dark, beautiful, blue and black fruit and anise spice that carries into a gravelly, leathery, hints-of-cigar box smokiness that comes through on the finish. It coats your mouth with luscious, gripping tannins with still enough acidity to hold up to a lot of good foods. This is just one more example of a fan favorite produced by Byington Vineyard & Winery.
